Sam Houston, one of the hosts of Zoomer Breakfast Radio with Neil, Sam and Jane, has created this fantastic poached pears recipe. It’s the perfect summer meal, plus you can wash it down with our alcohol-free beer and wine.
Poached Pears
What you’ll need:
3 firm pears (Bosc or Anjou)
Vin(Zero) Brut Blanc sparkling wine
Parmesan cheese
Arugula
Raw, unsalted pumpkin seeds
Green onions (scallions)
What you’ll need to do:
1. Cut each pear in half.
2. Place each pear face down in a pan on the stove.
3. Add enough Vin(Zero) Brut Blanc to allow the pears to percolate in it.
4. Simmer on low.
5. Once warm, add the pears to a bed of mixed greens.
6. Grate parmesan on top.
7. Add pumpkin seeds and green onions, and serve.
Dressing (serves 4-6)
What you’ll need:
5 tbsp extra virgin olive oil
2.5 tbsp apple cider vinegar
1 tbsp honey
1 tbsp grainy Dijon mustard
What you’ll need to do:
Mix ingredients well and drizzle as needed.
Sam’s extra tips:
– Add arugula for a nutty taste to enrich your mixed greens.
– Use a solid piece of Parmesan and shave off big chunks rather than using finer parm.
– Toast raw, unsalted pumpkin seeds ahead of time.
– Beyond salads, Sam suggests another tasty option. “It’s almost a dessert, so you could also serve it with a Pavlova, using egg whites.”
